This year, we plan to grow and harvest tonic herbs for sale. These herbs are very safe and gentle, and they can slowly improve overall health. My favourite tonics are stinging nettle, red clover, and oatstraw. For flavour, I’ll add peppermint, ginger, or a pinch of liquorice root. A few cups a week of these kind of herbal infusions are wonderful, locally-grown, mineral-rich, substitutes for imported (and expensive) drinks like coffee, tea, juice, or soda.
